<em>A canel? is a small French pastry with a soft and tender custard center and a dark, thick caramelized crust. The dessert, which is in the shape of small, striated cylinder approximately two inches in height, is a specialty of the Bordeaux region of France but can often be found in Parisian patisseries as well. Made from egg, milk and flour flavored with rum and vanilla, the custard batter is baked in a mold, giving the canel? a caramelized crust and custard-like inside.</em>





There are 2 kinds of popular molds to make these. The first is a copper-tin lined metal mold, the second is silicone. The recipe is different depending on the mold that you use. Check Amazon.com, the better qualify molds are pretty expensive, but you can use the cheap silicone ones to make frozen desert on a stick. :)

Fresh? The TJ's in AZ has frozen ones, not sure about here... I'm sure you meant fresh, but that I may as well mention it
