The problem with the fries at InNOut is that they are made to order. This is not the proper way to make good fries.



You just don't stick fries in oil and be done with it. After you cut them you have to chill them for 30 minutes to increase crispness. Then, you have to precook them (blanching) in oil and then either refrigerate them or freeze them so they regain their moisture content. And then you fry them before serving.



This is the advantage of other fast-food fries like McD and Burger King. Made to order is actually counter intuitive.





The wait at InNOut does bother me but I understand it and it's the trade off of made-to-order.

McDonald fries are THE BEST (especially with their BBQ sauce)!

I agree - I think there's crack in that salt that they put on the fries. I had Burger King fries after a very long time and they were crap compared to McD's.
