On the Border Irvine Marketplace closed. Whats next? (updated)

It shows how Chipotle raised the bar with Mexican food. Fresh organic produce, free range meat, and not so greasy. Price is reasonable except for guacamole.  :P
 
What is Chipotle similar to? I'm the only person on the planet who has actually never been to Chipotle (even though there is one right by my house). Is it like Rubio's? Or more like El Torito.

It's just make your own burrito style.. well everything is freshly made and you tell them what you want in it.  Good stuff.. try it.  Ask for a Quesorito (not on the menu). 
 
we debate quality but bottom line is OTB and el cholo are mexican cuisine. and there is less of it getting served in Irvine now vs. last year. if there is demand for "good mexican", are there more of these restaurants displacing the "bad mexican"? La Sirena is much smaller. I say Asian don't consume as much mexican food.

Isn't Taco Rosa still right there?  There wasn't many Mexican restaurants in general.  Fact remains.. best Mexican places are the hole in the wall.  Closest on is in Tustin at El Toro Bravo.

If you honestly want to call OTB Mexican food.. then I don't know.

Quality and price matter in everything.  Bad chinese places shutdown all the time.  While there is an influx of FCBs, there is a big market for good Mexican food.  It's just that the taste of people have moved from heavy Mexican food with lots of cheese and sauce to things that are not as heavy. 
 
Just go to Acapulco's for their buffet on Sundays.

Why would one go to a Mexican restaurant at the Tustin Market Place when you are so close to Tustin and Santa Ana?

Traditional Mexican restaurants are very different from California style Mexican (On the Border, Baja Fresh, Chipotle, etc...)  It like comparing traditional Chinese restaurant with PF Chang's.

Well, I guess I already know the answer to that.  The palette jump from Panda to authentic is quite far for many people.

So have fun eating at On the Border, I hear that their tortilla chips are really authentic! :)  :P

I can't speak for Chinese because I don't go to PF Changs but California Mexican is usually "cleaner" and not as heavy as regular Mexican food.
