Hopefully some enterprising restaurant entrepreneurs will read this...
For chain restaurants, I would like to see Shakey's (I get some serious Mojo cravings sometimes). The nearest is in Santa Ana, and getting Mojo's togo is a nogo since they get soggy quick.. Great family restaurant... should be able to pull in good money on sports days.. Lakers + fried chicken + mojos + pitcher miller lite = good times.
For specialty, I would like to see a Mongolian BBQ joint.. like the one in Lake Forest.. AYCE would be preferred, but I'll take the food court version of Great Khan's you find at the Mainplace mall.. Take it a step further by providing catering service for gatherings/parties ala taco dude.. I would definitley hire a mongolian bbq guy to cook for my party versus another taco guy.. just get a round circle grill and large chopsticks.. dress up like a Mongolian and you get good food and entertainment.
Another specialty.. something similar to Honda-ya.. asian food but with a focus on alcohol like Yardhouse.. open near UCI.. and it should be easy money..
This is a long shot.. but a noodle shop similar to Trieu Chau in Santa Ana (maybe I should just move to Santa Ana).. If I can get hot soup noodles for breakfast..I would be in heaven
