We've been charcoal grilling more then usual and had the best rib eye steak ever recently.  The steak is sold at your local Costco, it is the USDA Prime (blue package) at $12.99/lb.  Make sure you pick the best "purchase by dates" as these don't sell as fast as the USDA Choice and some have sat in their fridge for awhile.  Also recommend getting the Montreal steak seasoning while you're at Costco.  After getting your steak, head on over to H-Mart (we shop at the District Costco and just take that road next to Jamboree to head straight into H-Mart's parking lot), and pick up some peeled garlic and sesame oil.  When you get home fire up your charcoal and get it flaming.  While you wait stuff the garlic into the steak along the fatty part of the rib-eye.  You can slice up the garlic a little to make it easier to push into the soft steak.  Give it a good coating of sesame oil on both sides and sprinkle the Montreal seasoning to taste (you might decide not to do this for the pure steak enthusiasts).  When the charcoal flames has died down, plop that big steak onto the center of your grill (the briquettes would be touching the steak but I bought one of those grill toppers from Target so maybe 1/3" space in between).  Grill for 9 min one side and 8 min the other for a medium steak.  Flip with one of those metal spatulas as using tongs would make most of the garlic fall out.  Pour your favorite beverage (Costco's Kirkland's pre-mixed margarita is quick and easy with a blender) and enjoy. 

A good side dish for this are some grilled calamari.  H-Mart sells these tubed squid in their fridge aisle (near the frozen section) for about $2-3 for two pieces.  Rinse these well when you get home, cut along one side of the tube so it spreads flat.  Use the sharp point of your knife and make shallow cuts in the flesh of the flattened squid, this will prevent it from curling up when grilling.  Add your favorite marinade (we like Trader Joe's teriyaki marinade, a sprinkle of ponzu, and alot of cayenne pepper), and you can grill these immediately, and they do grill fast so stand by your calamari unless you like them blackened.

Defrosted the second USDA Prime Ribeye I got from Costco about a month ago..  grilled it today with the stuffed garlic and Montreal steak seasoning rub...  still juicy and delicious..  Once you have USDA Prime, you can't go back.. On a sad note, Costco bumped the prices on these steaks a dollar per pound..
 
Looks good.  Never tried the Montreal seasoning, is it available at the local grocery store?  Also, how long did you grill the steak for and did you only flip it once?  I'm still trying to find a good technique.
 
Montreal steak seasoning is at your local grocer, big bottle at Costco of course.  Grilled for about 9 min and about 8 min other side, flipping only once for a medium steak.  Of course the intensity of ur heat/ flame will vary, probably takes a couple times to figure out.  Wife likes it more well done, so 10 min both sides flipped 4 times for well done.

Saw this guy at my father in laws mens church group. He is a world renown chef and cooked for the White House at some point. Click on Recipes and he has some excellent tutorials on grilling different things, including steaks. He also has a recipe for homemade A1 Steak Sauce that is to die for.

These grilled onions are absolutely amazing! 
Take a large sweet onion - slice off the ends and cut in half to make 2 large rounds.  skewer if you like.  Brush 1 side with olive oil and throw on the grill for about 4 minutes (or until solid grill marks appear).  While its on the grill - brush the other side with olive oil - flip and grill for 5 minutes.  While you are grilling apply olive oil on the top and season with garlic salt.  This time when you flip - slide onto a piece of foil on the grill.  brush top with olive oil again.  Add gorgonzola cheese and crushed bread crumbs on top and drizzle with more olive oil to moisten the bread crumbs.  Cut another piece of foil to create a tent around the onions - keeping in the heat and steam.  Turn burner to low and leave on grill another 10-20 minutes to desired done.  Each onion round serves one.  Wow - that was a long recipe for a pretty simple process!  This is one of my favorites.
 
Tried the montreal seasoning and stuffed the garlic in my Top Sirloin.  [Always make Rib-Eye but wanted to try the Top Sirloin from Costco].    It was delicious, even my wife enjoyed it and she usually passes on steak!!  Thanks for the recipe, going to try it again Thursday but with Rib-Eye  :D
 
I bought Suzie-Q Santa Maria seasoning from Costco a few years ago and that seasoning is delicious, I use it all the time even though I have other seasonings (which aren't used much anymore).  Great on grilled steaks, chicken, salmon, pork ribs.  I haven't seen it at Costco lately but you can buy it from the Pacific Ranch Market on Chapman in Tustin or online.
 
That time again.. long weekend.. what to grill?? thinking of lobster tails.. maybe some flank steak..

Anyone have that egg dome grill you see at Costco?  Been watching Flay's grilling show and he seems to favor it.. but the cost.....
 
Just purchased the Big Green Egg a couple of weeks ago. Well worth the money! Everything I have prepared on the BGE is fabulous! I didn't want to purchase the one from Costco, since it was made in China. Didn't want to expose my family to any toxic chemicals that the Chinese factory may have used in manufacturing.

Made pizza last week and it tasted like it came out of a wood fired oven. Family raved about the taste.  Will be smoking some some babyback ribs for my Memorial Day BBQ. Never smoked ribs before, but I know it should come out really good.

My wife has been wanting one for awhile now.  We don't own a grill so we use the community one at the pool instead.  :'(  We've been lucky that no one uses it during dinner time.
