This school year, I have to get up over an hour earlier than before. I am not a morning person and can't really think straight at that hour. (Thank God I don't work east coast hours anymore. I don't miss it!) Anyway, I like to give my kids something to eat that will stick to their ribs. I never felt good about letting them have most of the boxed cereals that are on the market or frozen products like waffles even though they do sometimes eat those things. I grew up eating Malt-O-Meal, Cream of Wheat, oatmeal, etc. One of mine is super picky and the other just a little but they both refuse to eat the food which I consider perfectly "normal" in every way. They act as though I'm asking them to eat a bowl of vomit or something. I have been trying to get them to eat it for YEARS! Well, I found a great solution. I tried a new recipe for Oatmeal Waffles! Because it calls for packets of instant oatmeal, you can pretty much use any flavor like apple cinnamon, maple brown sugar, cinnamon spice, or substitute with quick oats and brown sugar if desired. It was sort of one of those: "Duh. Why didn't I think of that" moments. The first time I served them, I didn't say anything about the oatmeal or the whole wheat flour in them. They just ate it and loved it. THEN I broke the news to them. Mwahahaha. For the past two weekends, I've been making batches of oatmeal waffles and putting them in freezer bags. In the freezer they go. In the mornings, I pull out as many as are needed and put them into the toaster. They come out perfectly and of course it's quick and easy. While they're toasting, I just quickly cook them some turkey bacon or eggs, and pour their drinks, etc. You can also put in pumpkin puree for fall. I will be making those next weekend.
