Q: Do all or most Vietnamese restaurants sell beignets? Why or why not?

I have never been to a Vietnamese place, restaurant / cafe / pho joint or whatever. There are 2 near me. One sells beignets. The other does not. I get why the one does. French influence in Vietnamese cuisine. By why would the other not? I was going to eat there on Sunday but when I read the menu on the window outside, I kept walking when I saw no beignets. Most don't? Half and half? I'm so confused. It seems like it should be a staple, no? How do you know which ones do and don't?

Yeah, I understand why they have beignets. What I don't understand is why some don't. That's what I was wondering. Why not.
 
Yeah, Maison de Pho here in FR (the place that won't do a beignet) must have a deep fryer because they do fried wontons in addition to egg rolls. Only the other one here, Eleven46, does beignets.

How is that place (Eleven 46)?  I wanted to check it out on Labor day weekend, but they were closed  :o

I've yet to go.
