I had the pleasure to take a basic French bakery class with Chef Maurice Brazier at the Laguna Culinary Arts school this evening.



The class ran from 6pm-9pm and covered 4 dishes: Beignets de Carnival, Chocolate Mousse, Tuiles with Almonds, and Thin Apple Tart.



Laguna Culinary Arts school is located next to the Sawdust Festival at Laguna Beach, in a plaza to the right. The "school" was a lot smaller than what I had expected, with a nice cafe and wine shop in the front. But it was very nice and intimidate. The kitchen will only accommodate up to 10 students at a time, so all classes held here are "small" in size, with plenty of personal interaction with your instructor. Chef Brazier actually hand-held me through several steps.



The class was $85, which is twice of what you'd pay for a cooking class at the adult school (~$40). I'm fairly pleased with the experience and will return.

Naw, just accidentally left a little too much egg yolk in the bowl...



I tried to sign up for the pasta sauce class but it's fully booked. :(
 
Marche Moderne offers a less intensive cooking class (difficult to get reservations) for $80. It's 2 hours followed by the 3 course lunch. Williams Sonoma also offers some interesting classes if you're on their mailing list.
