The chef here used to work for Meijiya on Baker St. in Costa Mesa.  This is a Kappo restaurant, so don't expect a sushi bar here.  If only I can convince the owner to do traditional Japanese breakfast on weekends.  ;p

I might hit up Echizen in Cypress this weekend, will see.

 
Hey momo, speaking of breakfast, I once had a simple looking Japanese omelet but upon tasting it had a really good flavor.. can't pinpoint it... maybe from a dashi stock?  Of all places, it was during our last cruise on Holland america when I tasted it... maybe they just added MSG to it for that umami flavor?

With Japanese style breakfast, they usually serve tamagoyaki.  Was it a little sweet?

Finally found out how to make my japanese omelette... where do i find a square pan?

My first tamagoyaki...extra yaki.. got a little burnt :).. not used to using my cast iron square pan.. but the flavor is there..

Never realized experimental cooking can be a stress reliever..

Looked like one of my kid's "kitchen" toys...  great for frying eggs though... as for cooking tamagoyaki, I need more practice..
