Not sure why I never promoted this place, but here goes:

So I believe they are related to Pho Bac (best pho in Irvine IMO), also on Barranca on the other side of Culver. We usually order the fried egg rolls or cha gio from here and for what I can remember, always a hit at any party/pot luck we bring it to. Recently we needed a place to eat around 10:30 am in Irvine. I vaguely recall Capital Noodle being open around that time and proceeded toward that destination. Once I got there, found out they open 11am weekdays, only weekends they are open early. Crap, gotta eat now, kid is out of school less than an hour... what to do, what to do.. Oh look, Ha Long! Like a golden lighthouse in the middle of a 1st world problem: It's open!
Ordered two dishes, the spaghetti basil with ground beef and also the hu tieu with egg noodles (shrimp, wontons, pork). It was one of the better meals we had in awhile. Having just came back from Oahu, we need something that is not Hawaiian/creamy/heavy/spam. The spaghetti was decent:
But the real winner is the hu tieu:
Al dente cooked noodles, snappy veggies, crispy fried wonton, savory broth, springy shrimp, life fulfilling soup wontons, and best of all: the grilled pork pieces. Most pho restaurants don't do hu tieu justice and just boil the pork cuts. This place actually throws in marinated grilled pork bbq pieces! I'm a fan. This place puts Capital Noodle to shame with this noodle soup. I don't think I'll be venturing into Capital Noodle anytime soon with this gem just next door. And they're open early, 10am is about the time I need my savory noodle soup fix.
And pretty good service for Viet, last time we ordered the cha gio as a party tray, we arrived about 1 hour later then the pick up time, instead of giving us soggy egg rolls, they gave us the freshly fried ones. Thumbs up in my book..
