I was wondering what would be a good concept for the next "fad" dining place.
So far we have BYO pizzas, gourmet nitrogen ice cream and also ice cream sandwich joints.
One thing that I saw in Mammoth that was pretty good was Pita Pit (not a great name). it was like a Subway but they could grill your meats and put them into the pita bread. It was really good and was wondering if they could compete with Subway:

Something similar popped up in the Tustin Martketplace, Piadina:

Basically Italian flatbread sandwiches made to order Subway (or Chipotle if you prefer) style.
I always thought someone should try to come up with a BYO pizza store but have the option of thick crust (or pan) pizzas. It would probably require some pre-baked crusts to reduce cooking time, but all the bread at Subway is pre-baked.
And why is the BYO pizza concept so much easier to knock off than Chipotle? Other than Chronic Tacos, I don't know of any other BYO burrito/taco joint.
I actually like the California Gogi concept (just had some the other day), maybe someone should do one with Vietnamese food (I guess those Banh Mi shops?). You can do a fusion concept where it's Asian but you can have it in a burrito (wrap), taco or with rice... or on a pizza?!?
