I'm going with a concrete countertop. Should I be concerned with cracking later down the road (or do you think this adds to the natural beauty?)? One landscaper recommended I score the countertop, but I'm not too fond of the look with scores. Any advice?

There are two types of concrete: concrete with cracks and concrete that hasn't cracked yet.

Scoring will help cut down on severity and number of cracks.

I've seen them done in a number of model homes and I really like the look. I did granite for my BBQ island counter, mainly because I had the opportunity to match the kitchen counters inside.
